Butterflake Rolls

Ingredients

The dough

  • 3 tablespoons sugar
  • 1 packet active dry yeast (equivalent to 2 and ¼ teaspoons)
  • 1 cup warm milk
  • 3 cups all-purpose flour
  • 1 ¼ teaspoons kosher salt
  • 4 tablespoons butter (softened)
  • as needed spray cooking spray

For serving

  • as needed butter
  • as needed jam

Instructions

  1. Dissolve sugar and yeast in warm milk and let stand for 3 minutes.
  2. Add flour and salt to the mixture and stir until a dough forms.
  3. Knead the dough for 5 minutes until smooth, then let it rest covered for 10 minutes.
  4. Roll the dough into an 11 x 9 inch rectangle and spread butter over it.
  5. Fold the dough into thirds and place it in the freezer for 10 minutes.
  6. Repeat the rolling and folding process two more times, freezing the dough in between.
  7. Roll the dough into an 11 x 8 inch rectangle, then roll it up jelly-roll style and cut into 12 equal slices.
  8. Place the slices in muffin cups coated with cooking spray and let them rise for an hour or refrigerate for up to 4 hours.
  9. Preheat the oven to 375°F and bake the rolls for 20 minutes until golden brown.
  10. Cool for 5 minutes on a wire rack and serve warm with butter and jam.
