Sous Vide Ribs

Ingredients

The ribs

  • 1 rack baby back pork ribs

The dry rub

  • 1 tablespoon kosher salt
  • ¼ cup brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

The barbecue sauce

  • ½ cup ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat the sous vide to 150°F.
  2. Remove the white membrane from the ribs and slice the rack in half.
  3. Mix all dry rub ingredients together and rub half onto both sides of the ribs.
  4. Place the ribs in a resealable plastic bag and remove the air.
  5. Submerge the bag in the sous vide bath and cook for 24 hours.
  6. Prepare the barbecue sauce by combining all sauce ingredients in a saucepan and simmering for about 10 minutes until thickened.
  7. Remove the ribs from the sous vide, pat dry, and season with the remaining dry rub.
  8. Brush the ribs with barbecue sauce and grill for 5 minutes per side until charred.
  9. Alternatively, bake the ribs in the oven at 300°F for 20 minutes, then brush with more sauce and bake for an additional 10 minutes.
