Coconut Flour Crackers

Instructions
- 1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
- 2. Melt the mozzarella cheese until smooth and easy to stir.
- 3. In a food processor, blend together the egg, coconut flour, and sea salt.
- 4. Add the melted mozzarella to the food processor and blend until a dough forms.
- 5. Chill the dough for 1 hour until firm.
- 6. Roll the dough between two pieces of parchment paper to a thin rectangle.
- 7. Cut the dough into rectangles and prick with a fork to prevent air bubbles.
- 8. Bake for about 10-15 minutes until just barely golden.
- 9. After baking, prop the oven door open and leave the crackers inside for at least 30 minutes to crisp up.
