Ingredients

  • 1 cup Mozzarella cheese (shredded)
  • 2 large Egg (beaten)
  • ½ cup Wholesome Yum Coconut Flour
  • ¼ tsp Sea salt

Instructions

  1. 1. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. 2. Melt the mozzarella cheese until smooth and easy to stir.
  3. 3. In a food processor, blend together the egg, coconut flour, and sea salt.
  4. 4. Add the melted mozzarella to the food processor and blend until a dough forms.
  5. 5. Chill the dough for 1 hour until firm.
  6. 6. Roll the dough between two pieces of parchment paper to a thin rectangle.
  7. 7. Cut the dough into rectangles and prick with a fork to prevent air bubbles.
  8. 8. Bake for about 10-15 minutes until just barely golden.
  9. 9. After baking, prop the oven door open and leave the crackers inside for at least 30 minutes to crisp up.
