Salted Dark Chocolate Fruit and Nut Clusters

high quality dark chocolate, chopped into chip-size pieces

Instructions
- Preheat the oven to 300°F.
- Spread the pecans on a sheet pan and bake for 13-15 minutes until aromatic and slightly darker.
- Cool the pecans and crush 10 of them in a small bowl.
- Line another sheet pan with parchment paper or a silicone baking mat.
- Melt the chocolate in a bowl in the microwave, stirring every 30 seconds until smooth.
- Check the temperature of the melted chocolate; it should be around 90°F.
- Scoop the crushed pecans onto the lined sheet pan in small circles.
- Spoon the tempered chocolate onto each pecan circle.
- Top each with a cherry, a pistachio, and a whole pecan.
- Drizzle honey on each pecan and sprinkle with sea salt.
- Allow the chocolate to set until firm, then carefully remove and store in an airtight container.
