Instructions
- Preheat the oven to 275°F and line a half sheet pan with parchment paper.
- Melt the butter in a skillet over medium heat, stirring until it foams and browns, about 5-6 minutes.
- Remove from heat and stir in the brown sugar, honey, and vanilla.
- Pulse the pecans in a food processor until finely ground.
- In a large bowl, mix the ground pecans, oats, pumpkin seeds, coconut, orange zest (if using), cinnamon, and salt.
- Pour the brown butter mixture over the dry ingredients and stir to combine.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 60 minutes, stirring every 20 minutes until golden and fragrant.
- Allow to cool completely on the baking sheet, then crumble and stir in cranberries if desired.
