Mango-Raspberry Fruit Roll Ups

Ingredients

The fruit

  • 1 large ripe mango, peeled and chopped
  • 6 ounces fresh raspberries

The sweetener

  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 150ºF and line a rimmed baking sheet with a silicone mat.
  2. Blend the mango until smooth and set aside.
  3. Blend the raspberries with sugar until smooth.
  4. Spread dollops of the mango and raspberry purées evenly over the prepared pan.
  5. Bake for 2 hours 30 minutes to 3 hours, rotating the baking sheet every hour until tacky but not wet.
  6. Let the leather cool, then remove it from the mat and cut into strips.
  7. Roll the strips up with wax paper and store in a sealed container.
