Ingredients

Dry Ingredients

  • 1 cup yellow cornmeal

  • ¼ cup sweetener or sugar

Wet Ingredients

  • 1 large egg
  • 2 tablespoons unsalted butter
  • ¾ cup buttermilk

Instructions

  1. Combine the dry ingredients in a mixing bowl.
  2. Add the egg, melted butter, and buttermilk to the dry ingredients and stir until combined.
  3. Pour the batter into silicone muffin molds, filling each about ¾ full.
  4. Place the molds in the air fryer and cook at 330°F for 11-15 minutes.
  5. Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean.
