Instructions
- 1. Preheat the oven to 350°F and grease a 9x13-inch baking pan.
- 2. In a skillet, melt 2 tablespoons of butter, then add chopped apples, brown sugar, and pumpkin pie spice. Sauté until softened.
- 3. In a bowl, whisk together flour, baking powder, pumpkin pie spice, and salt.
- 4. In a large bowl, beat together butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time.
- 5. Gradually mix in the flour mixture, alternating with buttermilk and vanilla.
- 6. Fold in the sautéed apple mixture.
- 7. Spread the batter in the prepared pan and bake for 35-50 minutes until golden and a toothpick comes out clean.
- 8. For the frosting, brown 1/2 cup of butter in a saucepan, then mix with heavy cream, vanilla, and powdered sugar until smooth.
- 9. Once the cake is cool, spread the frosting over it and cut into squares.
