Ingredients

  • 20 ounces frozen green beans
  • 2 tablespoons butter
  • 8 ounces sliced button mushrooms
  • 1 medium onion, diced
  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • ¼ cup all-purpose flour
  • ¾ cup chicken or vegetable broth
  • 1 ½ cups half and half
  • 2 cups shredded cheddar cheese, divided
  • 1 teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup fried onions

Instructions

  1. Preheat the oven to 400°F and spray a 13 x 9 casserole dish with cooking spray, then add the green beans.
  2. Melt the butter in a large dutch oven over medium-high heat, then add mushrooms and onions, cooking for 8 minutes.
  3. Add garlic and thyme, then stir in flour and cook for an additional minute.
  4. Stir in the broth until combined, then add half and half and bring to a simmer over medium heat.
  5. Reduce the heat to low, stir in 1 cup of cheese, salt, and pepper, and cook until the cheese melts.
  6. Pour the cheese sauce over the green beans and top with the remaining cup of cheese.
  7. Bake for 15 minutes, then add fried onions and bake for an additional 5 minutes.
