Ingredients

The beans and vegetables

  • cups dried navy beans
  • 1 oz bacon (cooked and diced)
  • 1 each green bell pepper (diced)
  • 1 each onion (quartered)

The sauce

  • 15 oz tomato sauce
  • ¾ cup pure maple syrup
  • 3 tablespoons yellow mustard
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • to taste pepper (black or red)

The liquid

  • cups water

Instructions

  1. Place the beans, bacon, bell pepper, and onion in the slow cooker.
  2. In a small bowl, whisk together the tomato sauce, maple syrup, mustard, vinegar, chili powder, salt, and pepper.
  3. Pour the sauce over the bean mixture and add the water.
  4. Set the slow cooker to high and cook for 10 to 12 hours.
  5. Discard the onion pieces before serving warm.
