Ingredients

The granola base

  • 1 cup pecans
  • ½ cup walnuts
  • ¾ cup almonds
  • ¼ cup maple syrup
  • cup tahini
  • 2 tablespoons coconut oil (melted and cooled)
  • ½ teaspoon vanilla extract
  • 1 cup unsweetened coconut flakes
  • ¼ teaspoon cardamom
  • ½ teaspoon cinnamon
  • 1 teaspoon sea salt

The chocolate

  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 300°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the maple syrup, tahini, melted coconut oil, vanilla extract, cardamom, cinnamon, and sea salt.
  4. Add the nuts and coconut flakes, stirring to coat everything well.
  5. Transfer the mixture to the baking sheet and press it down into a single layer.
  6. Bake for 15 minutes, then rotate the tray and bake for another 15 minutes.
  7. Allow the granola to cool for 15 minutes before adding the chocolate chips.
  8. Once completely cool, break the granola apart and enjoy.
