Grilled Zucchini With Goat Cheese and Pine Nuts

goat cheese

toasted pine nuts

parsley leaves or fresh thyme leaves
Instructions
- Prepare the grill on medium heat and clean the grates.
- Slice the zucchini into thin strips lengthwise, about ¼" thick.
- Drizzle the zucchini with olive oil and season with salt and pepper.
- Toast the pine nuts in a small skillet over medium-low heat for about 3-4 minutes until lightly browned.
- Grill the zucchini for 2-3 minutes on each side until softened and grill marks appear.
- Arrange the grilled zucchini on a platter, drizzle with olive oil, and squeeze lemon juice over it.
- Top with goat cheese, toasted pine nuts, lemon zest, and herbs if desired.
- Serve warm or at room temperature.
