Ingredients

The Zucchini

  • 4 medium zucchini or yellow squash
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil

The Toppings

  • 3 ounces goat cheese
  • ¼ cup toasted pine nuts
  • juice of ½ lemon plus lemon zest
  • cup parsley leaves or fresh thyme leaves

Instructions

  1. Prepare the grill on medium heat and clean the grates.
  2. Slice the zucchini into thin strips lengthwise, about ¼" thick.
  3. Drizzle the zucchini with olive oil and season with salt and pepper.
  4. Toast the pine nuts in a small skillet over medium-low heat for about 3-4 minutes until lightly browned.
  5. Grill the zucchini for 2-3 minutes on each side until softened and grill marks appear.
  6. Arrange the grilled zucchini on a platter, drizzle with olive oil, and squeeze lemon juice over it.
  7. Top with goat cheese, toasted pine nuts, lemon zest, and herbs if desired.
  8. Serve warm or at room temperature.
