Ingredients

  • ¼ cup almond flour
  • 3 tbsp creamy almond butter
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • ¼ cup dairy-free chocolate chips
  • 1 tsp ground flax seed (or ½ of one egg)
  • ½ tsp baking soda

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare the flax egg by mixing ground flaxseed meal with 1 tablespoon of water and let it thicken for at least 5 minutes.
  3. In a medium bowl, combine almond flour, almond butter, maple syrup, vanilla extract, and baking soda.
  4. Add the flaxseed mixture to the bowl and mix well.
  5. Fold in the chocolate chips.
  6. Form the dough into a large ball and place it on a parchment-lined baking sheet.
  7. Press the cookie down to about ½ inch thick.
  8. Bake for 13-14 minutes.
  9. Remove from the oven and let cool to harden.
