Ingredients

The base

  • ¼ cup unsalted butter
  • ¼ cup whole wheat flour
  • 2 cups milk
  • ¼ cup heavy cream or half-and-half

The corn

  • 4 cups fresh or frozen corn kernels

Seasoning

  • 1 tbsp granulated sugar (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. If using fresh corn, shuck the ears and remove the kernels; if using frozen corn, thaw it.
  2. Melt the butter in a large skillet over medium heat.
  3. Whisk in the whole wheat flour and cook until smooth and slightly golden.
  4. Gradually whisk in the milk to avoid lumps.
  5. Add the corn, sugar (if using), salt, and black pepper; stir to combine.
  6. Reduce heat to medium-low and simmer for 10 to 12 minutes until corn is tender and sauce thickens.
  7. Stir in the heavy cream or half-and-half.
  8. Taste and adjust seasoning as needed.
  9. Remove from heat and let cool slightly before serving.
  10. Serve warm as a side dish.
