Charred Cherry Tomatoes

Ingredients

The tomatoes

  • 2 cups cherry tomatoes

The seasoning and sauce

  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic
  • ½ teaspoon cumin seeds
  • ½ teaspoon honey or maple syrup
  • 5 sprigs thyme leaves
  • 1 lemon zest
  • 1 cup thick whole milk Greek yogurt
  • 1 pinch red pepper flakes
  • to taste sea salt
  • to taste freshly ground black pepper
  • to garnish fresh mint leaves

Instructions

  1. Preheat the oven to 425°F.
  2. In a medium bowl, combine the tomatoes, olive oil, garlic, cumin, honey, thyme, half the lemon zest, salt, and pepper.
  3. Pour the mixture into a small rimmed baking dish and roast for 18 minutes.
  4. Turn the oven to broil and broil for 2 minutes until the tomatoes begin to char.
  5. In a small bowl, mix the yogurt with the remaining lemon zest and salt.
  6. Spread the yogurt on a serving plate and top with the roasted tomatoes.
  7. Sprinkle with red pepper flakes and garnish with thyme and mint leaves.
  8. Serve with crusty bread for dipping.
